I usually utilise a combination of the most basic stitches to create amigurumi. Below are some techniques which I use a lot. Also, some references on techniques which I find useful. Most of them are from Planet June, by June, whom I believe provides the soundest techniques around.
Starting:
Magic Circle I find this the best way to start.
Crocheting in the round Refer to below illustration. I usually do this for making eyes.
Making:
Doing an invisible decrease The best way to eliminate unsightly bumps.
Colour Changing I do it this way too.
Crocheted Jogless Stripes A good way to create nice stripes in your work.
Finishing:
Fastening off - Closing off a piece and finishing an open piece.
Assembling:
Chain
Single Crochet (sc)
Slip Stitch (slst)
Increase (2scinc)

Crocheting in the Round: Yarn over your hook (yo) and draw the yarn through the stitch and the loop on your hook to complete 1 slip stitch (slst). To crochet in the spiral simply means to not perform a slip stitch and moving on to the next round directly.
When crocheting in the round for single crochet stitches I usually find lines in my work which I find unsightly, so I tend to advocate crocheting in the spiral. However, in the case of making parts such as crocheted eyes, I would crochet in the round.
